Indian baigan bhajee
A nice Indian recipe. The vegetarian main course contains the following ingredients: sunflower oil, onion (finely chopped), potatoes (in small cubes), roma tomatoes ((a 750 g), in small cubes), aubergine (in small cubes), garam masala (pot a 65 g ), ground mustard seeds, naan bread, fresh coriander ((15 g) and finely chopped).

Heat the oil in a large pan and fry the onion until golden brown.

Add the potato cubes and fry them for 2-3 minutes.

Add the cubes of tomato and eggplant and season everything with the garam masala, mustard seed and salt.

Let the whole with the lid tilted on the pan in 15-20 minutes.

In the meantime, prepare the flat bread according to the instructions on the packaging.

Sprinkle the baigan bhajee with coriander and serve with the flat bread..
