Directions

  1. Blanch the kale and spinach for 1 minute in boiling water.
  2. Heat the oil in a large pan and fry the onion, garlic, ginger, cinnamon, bay leaf, tomato and red pepper.
  3. Add the kale and spinach, pour 1 liter of water and boil for about 10 minutes.
  4. Remove the bay leaf and puree the soup with a hand blender. Season with salt and pepper and spread the soup over bowls.
  5. Spoon a little crème fraîche in the middle of each bowl and sprinkle with pepper and / or a pinch of cumin.
