Rinse 2 cans of white beans under cold water and allow to drain well.

Mix with the lemon juice, lemon zest, 2 tablespoons of olive oil, red onion, chopped fresh mint and chopped parsley.

Season to taste with salt and pepper and leave to soak for 30 minutes.

Drain 2 cans of sardine fillets and divide into coarse pieces.
-
Fry a few slices of crumbled old bread in a layer of olive oil until golden brown.

Mix the beans with the sardines and breadcrumbs and serve.
