Allow the cheese to reach room temperature for about 1 hour before serving. This way the flavors come into their own.

Break the drained mozzarella, lay on a shelf and drizzle with the olive oil. Sprinkle with salt to taste.

Put the pieces of cheese next to it. Serve with the quince paste and pieces of toast.
