Put the flour in a bowl with a pinch of salt and break the eggs above it.

Pour in the milk and beat everything with the hand mixer to a smooth and liquid batter.

Cut the leeks into wafer-thin rings.

Cut the ham into thin strips.

Cut the Gorgonzola into pieces.

Heat a dash of olive oil in the frying pan and fry some of the leeks, oregano and the ham, until the leek begins to shrink.

Pour a hefty ladle of batter and let it flow over the pan base.

Bake until the bottom is dry, turn the pancake and divide pieces of Gorgonzola over it.

Fry the bottom until golden brown and let the cheese melt.
