Italian meal soup with spinach crostini
Italian recipe for a quick and vegetarian meal soup with pasta, vegetable mix, green pasta and Parmesan cheese. Served with spinach crostini.

Preheat the grill to the highest setting.

Bring the soup to a boil in a pan. Add the tortellini and vegetable mix and cook gently for about 8 minutes. Stir fry the spinach and pesto in a frying pan for about 2 min.

Cut the ciabatta into 8 slices. Spread the spinach mixture over the ciabatta slices and sprinkle with cheese. Color the slices 2 to 3 minutes under the hot grill. Serve the crostinis with the soup.
