Italian meal soup with spinach crostini


Italian recipe for a quick and vegetarian meal soup with pasta, vegetable mix, green pasta and Parmesan cheese. Served with spinach crostini.

Directions

  1. Preheat the grill to the highest setting.
  2. Bring the soup to a boil in a pan. Add the tortellini and vegetable mix and cook gently for about 8 minutes. Stir fry the spinach and pesto in a frying pan for about 2 min.
  3. Cut the ciabatta into 8 slices. Spread the spinach mixture over the ciabatta slices and sprinkle with cheese. Color the slices 2 to 3 minutes under the hot grill. Serve the crostinis with the soup.
