Mussels with Italian stir-fry vegetables, red wine and basil.

Rinse the mussels under cold running water. Tap the opened mussels with a convex side against the counter. If the mussel remains open, discard.

Add the tomatoes, wine and mussels and bring quickly to the boil. Cook the mussels for 7 minutes until all the shells are open.

Slice the garlic. Heat the oil in a large pan or mussel pan. Fry the garlic and the stir-fry mix for 5 minutes.

Remove the dense mussels. Slice the basil.

Spoon the mussels and vegetables into deep plates and sprinkle with the basil. Serve with baguette.
