Directions

  1. Cut the sundried to small pieces.
  2. Beat the eggs.
  3. Stir in the tomato pieces, the fresh basil and the grated eggs.
  4. Then heat olive oil in a frying pan and pour the egg mixture into the pan.
  5. Spoon this mixture until the egg is solidified.
  6. Season with salt and pepper and serve with crusty baguette.
