Preheat the oven to 200 ºC.

Sprinkle the abdominal cavity of the trout with pepper, salt and Italian herbs. Chop the onion and cut the to in strips.

Fill the trout with the onion and tomato. Sprinkle the outside of the trout with pepper and salt.

Place each trout on a piece of aluminum foil and drizzle with the oil.

Fold the aluminum foil into a package and fry the fish in the middle of the oven for about 25 minutes until done.

Heat the spinach and mashed potatoes according to the instructions on the package. Serve the fish with the puree and spinach.
