Steamed cod fillet with arugula basil sauce

Scrape long ribbons of the cucumber.

Dab the fish fillets dry and sprinkle with salt and pepper.

Wrap 2 slices of bacon and 2 cucumber ribbons around each piece of fish.

Place the fish in a sieve or steam basket over a pan of boiling water and steam the fish in 7-8 minutes until done.

Put the arugula and basil in a sieve and pour boiling water over it.

Puree in a food processor or blender the arugula and basil with the lemon juice and the fish stock.

Add the egg yolks and mix at a high setting. Add the melted butter in a stream during mixing.

Pour the sauce in a pan and heat without stirring until the sauce binds.

Spoon the sauce on warm plates, put the steamed fish on top and sprinkle with the tomato cubes.

Delicious with peas and rice.
