Prepare the sushi rice according to the instructions on the package. Cut the shiitakes into slices.

Cook the shiitakes 2-3 minutes in the sugar, soy sauce and sherry. Allow to cool. Beat the eggs with the wasabi powder.

Cut the celery and stir it with the shrimp through the egg. Heat the butter in a small frying pan.

Fry a thick omelette of the egg and let it cool. Cut the omelette into 6 pieces.

Divide the nori sheets into quarters. Divide the rice into 12 portions. Squeeze the rice portions together into an oval shaped ball and place on a nori sheet.

Divide the shiitakes over half of the rice portions. Divide the omelette over the other portions. Store cool until served.
