Directions

  1. Make a clean tea towel wet under running water and squeeze out well.
  2. Put a colander on a bowl and cover the colander with the damp cloth.
  3. Pour the yogurt into the colander and add a pinch of salt.
  4. Let the yogurt drain for at least 4-5 hours. The longer the yogurt can drain, the thicker the hangop.
  5. After draining, place in a shallow dish and make peaks with a fork.
  6. Crumble the feta and sprinkle over it.
  7. Mix the oregano in a bowl with the roasted sesame seeds and some freshly ground black pepper.
  8. Sprinkle this over the feta and garnish with strips of fresh mint.
