Courgette salad
A tasty recipe. The vegetarian side dish contains the following ingredients: green beans, courgettes, extra virgin olive oil, garlic (finely chopped), mint ((15 g), only the leaves) and white wine vinegar.

Remove the tip and the stalk of the green beans. Cook the green beans in water with salt in 8 minutes until al dente. Drain and put into a bowl.

In the meantime cut the courgettes in 8 parts lengthwise. Cut each part into 3 pieces. Add 3 tbsp oil and the garlic and mix.

Heat the grill pan and grill the zucchini with garlic for 3 minutes. Add to the green beans. Spoon with the rest of the oil, the fresh mint and vinegar. Season with salt and pepper.

Allow to stand at room temperature for 30 minutes so that the flavors can be withdrawn. Tasty with rice and the fish with chives.
