Lawyer parfait with roasted mango and basil
Mix the whipped cream with the lawyer and vanilla custard. Divide this mixture over the glasses and put in the freezer for 3-4 hours.
Mix the honey with the orange juice and the red pepper. Put in the slices of mango and marinate for about 15 minutes.
Heat the oven grill.
Place the mango in the baking dish. Place the dish at least 10 cm under the grill and toast the mango for 5-7 minutes. Note that the pepper does not burn. Allow to cool slightly.
Serve the mango on the lawyer's parfait and garnish with leaves of basil.
