Leek soup with apple and curry


You can not make a soup with leeks and apple, you can not make it healthier. The curry gives it a surprising twist

Directions

  1. Wash the leek cut into rings.
  2. Peal the apples .
  3. Cut bread from the apples using a melon cutter.
  4. Place the bread rolls in water with the lemon juice added so that they do not discolour.
  5. Cook the leeks in the broth until done.
  6. Purée the soup with the hand blender or rub the soup through a sieve.
  7. Stir the curry through the soup with a whisk.
  8. Spoon the apple balls with a slotted spoon from the water at the last moment, add them to the hot soup and simmer for 1 minute.
  9. Serve the soup in deep plates or bowls, scoop a spoon of crème fraîche and sprinkle with finely chopped chives or parsley.
