Put the radishes in ice cold water for half an hour. Cut off the foliage and keep the beautiful leaves separate.

Cut the radishes in a food processor, with a thin slicer or by hand in slices that are as thin as possible.

Beat a dressing of the vinegar, mustard and oil and stir in the chives. Season with salt and pepper.

Divide the shaved radishes as flat as possible over 4 plates and pour a trickle of dressing over.

Mix the arugula with the trailed radish leaves. Divide the arugula in the middle of the radishes and drape a few slices of roast beef on or next to it.

Sprinkle with some pepper and drop some dressing over.
