Radish salad with roast beef

Directions

  1. Put the radishes in ice cold water for half an hour. Cut off the foliage and keep the beautiful leaves separate.
  2. Cut the radishes in a food processor, with a thin slicer or by hand in slices that are as thin as possible.
  3. Beat a dressing of the vinegar, mustard and oil and stir in the chives. Season with salt and pepper.
  4. Divide the shaved radishes as flat as possible over 4 plates and pour a trickle of dressing over.
  5. Mix the arugula with the trailed radish leaves. Divide the arugula in the middle of the radishes and drape a few slices of roast beef on or next to it.
  6. Sprinkle with some pepper and drop some dressing over.
