Put the frozen peas in a soup pot.

Heat the broth and pour the boiling broth onto the peas. Let this stand for 15 minutes so that the broth cools down.

Add the fresh mint and puree the whole.

Put the soup in the refrigerator for at least 30 minutes.

Divide the ham strips over 4 soup bowls or plates.

Pour the chilled soup and divide the crème fraîche with chives or spring onions.
