Zucchini cookies with salmon
A tasty recipe. The lunch contains the following ingredients: fish, zucchini, smoked salmon cubes (a 100 g), fresh mint leaves (finely chopped), Greek yogurt, egg, flour and olive oil.

Grate the zucchini in coarse slices and pat dry with kitchen paper.

Beat in a bowl the egg with the flour and some salt and pepper.

Cut the salmon cubes in half and scoop them with the zucchini and three quarters of the fresh mint through the batter.

Heat the olive oil in a large frying pan and add 6 small pieces of the zucchini mixture.

Press the hills with the convex side of a spoon flat immediately and fry on a high heat for 4-6 minutes on both sides until golden brown.

Let them drain on kitchen paper.

Bake 6 more cookies from the rest of the zucchini mixture.

Mix the yogurt with the rest of the fresh mint and season it to taste with salt and pepper.
