Lemon blinis
A tasty recipe. The snack contains the following ingredients: fish, whole milk (lukewarm), yeast, sugar, eggs (split), flour, lemon (scrubbed), butter, smoked salmon (a 100 g), crème fraîche (125 ml) and chives ( finely chopped).

Mix the milk with the yeast and sugar. Let stand for 5 minutes. Beat the egg yolks with a mixer. Add the flour, 1 pinch of salt and the milk. Let rise for 1 hour in a warm place.

Grate the yellow skin of the lemon. Beat the egg white stiffly. Spatula with the grater through the batter. Melt 1/4 of the butter in a frying pan. Make 5 pieces of batter of approx. 5 cm. Fry the blinis in approx. 4 min. Until done. Turn halfway. Keep warm under aluminum foil. Continue until the batter is finished.

Divide the salmon into about 20 pieces. Spoon 1/2 tsp crème fraîche, salmon and chives on each blini.
