Fruit spread made from lemon and caster sugar.
Squeeze the lemons and heat the juice together with the butter in a saucepan with a thick bottom on low heat until the butter has melted.
Meanwhile, mix the eggs with the sugar in a bowl with a whisk. Add, with stirring, the lemon-butter mixture.
Pour it back into the cleaned pan. Bring to a simmer while stirring on low heat. Keep stirring and let the curd thicken until it is as thick as custard.
Pour the leces into a clean pot. Yummy! .
