Make sure the butter is at room temperature or heat it for 10 seconds at 600 Watt in the microwave.

Prepare the lemon zest, 1 tablespoon of lemon juice and the fresh mint through the butter with a fork. Season with (sea) salt and pepper.

This lemon-mint butter is delicious with grilled fish, lamb and vegetables.
