Directions

Cook the lentils in the stock for about 20 minutes. Drain and collect the moisture.

Heat the olive oil and reduce the garlic, red onion and bay leaf 6-8 minutes.

Add the pepper strips and mushrooms and cook for 2-3 minutes. Meanwhile, toast the bacon in a dry, hot frying pan for 3-4 minutes.

Scoop the lentils and possibly a dash of meat stock through the mushroom mixture. Divide the bacon and the feta over the dish.

Serve with the bread and the oil for dipping.
