Directions

  1. Cook the lentils in the stock for about 20 minutes. Drain and collect the moisture.
  2. Heat the olive oil and reduce the garlic, red onion and bay leaf 6-8 minutes.
  3. Add the pepper strips and mushrooms and cook for 2-3 minutes. Meanwhile, toast the bacon in a dry, hot frying pan for 3-4 minutes.
  4. Scoop the lentils and possibly a dash of meat stock through the mushroom mixture. Divide the bacon and the feta over the dish.
  5. Serve with the bread and the oil for dipping.
