Basic recipe classic mussels
Dutch recipe with mussels, leeks, carrot, parsley, fish broth, butter, mayonnaise, yogurt and garlic.

Rinse the mussels under running water. Remove the mussels that are broken or that do not close automatically after a large tap on the counter.

Wash the leek and cut into oblique rings. Cut the carrot into slanted slices and the parsley fine.

Put the leek and the carrot with the parsley in a large pan and place the mussels on them. Add generously (freshly ground) pepper and the stock.

Cook the mussels with the lid on the pan for 5-8 minutes until done; shake them occasionally. Add the butter into cubes as soon as the mussels are open.

Stir in a sauce of the mayonnaise, yogurt and pepper and salt. Press the garlic above it.

Spoon the mussels with the vegetables and some steam in bowls.
