Fry the bacon cubes in 1 tablespoon of olive oil.

Add the onion and garlic and cook for 3 minutes.

Stir in the lentils and pour in enough water that they just covered. Bring to the boil and cook gently for 25-30 minutes. Stir regularly until the lentils are tender and the moisture is absorbed.

Add the bell pepper and celery over the last 10 minutes of the cooking time. Season with salt and pepper.

Spoon 3 tablespoons of olive oil and lemon juice. Allow to cool to lukewarm.

Meanwhile, fry the sausages in the rest of the olive oil. Place the sausages on the lentil dish and sprinkle with the parsley.

Serve with coarse brown bread if necessary.
