Directions

  1. Preheat the oven to 220 degrees Celsius.
  2. Place the tomatoes in an oven dish.
  3. Sprinkle with olive oil, pepper and salt and squeeze out the garlic.
  4. Place the oven dish in the oven and roast the tomatoes within 20 minutes.
  5. They are ready when they look wrinkly.
  6. Roast the walnuts briefly in a frying pan and chop into coarse pieces.
  7. Rinse the lentils and let them drain in a colander.
  8. Then put them in a bowl and add the onion and the parsley.
  9. Make the dressing mix well with the mustard, honey and olive oil.
  10. Finally add the lemon juice and pour the dressing over the lentils.
  11. Crumble the goat's cheese and add it to the lentils.
  12. Mix well and season with salt and pepper.
  13. Divide the lentils over 2 plates and place the roasted tomatoes on top.
  14. Finally, sprinkle with the crumbled walnuts.
