Bring the soya cream to the boil with the garlic, pepper, sea salt, shallot and sprigs of thyme. Turn off the heat and allow to draw for 1 hour.

Peel the potatoes and rinse them in a colander. Strain the soy mixture and put in a saucepan. Bring to the boil and remove from the heat.
