Lentil salad with breaded bacon slices
Cut the bacon strips into strips and sprinkle them around with salt and the ras el hanout. First take the strips through the flour and then through the egg. Then roll them into the breadcrumbs.
Pour a layer of boiling water over the peas and let stand for 5 minutes. Drain and drain. Preheat the oven to 180ºC.
Heat 2 tablespoons of olive oil with the sunflower oil in a frying pan on medium height. Fry the bacon in portions to turn golden brown. Put them on the baking sheet and bake them for another 5 minutes in the oven.
Meanwhile, season the lentils with peas, spring onions, coriander, lemon zest and juice. Season the salad with the rest of the olive oil, salt and pepper.
Serve the lentil salad with the crispy bacon strips on it.
