Letter sandwich biscuits with jam


Cookies with 5 spices and raspberry jam in the shape of a letter.

Directions

  1. Sift the flour, baking powder, 5 spices and the salt over a bowl.
  2. Put the butter and granulated sugar in a different bowl and mix in 5 min. Airy and creamy.
  3. Mix in the egg and vanilla flavor. Add the flour mixture and quickly knead to a cohesive dough.
  4. Put wrapped in cling film for 2 hours in the refrigerator.
  5. Preheat the oven to 175 ºC.
  6. Roll out the dough on a floured sheet with a thin cloth (approx. 3 mm).
  7. Cut out cookies with the square and round protuberance. Place them 2 baking sheets lined with parchment paper at a distance of 2 cm between them.
  8. Cut out letters from the biscuits with the letterers.
  9. Fry the cookies on the baking trays for about 10 minutes in the middle of the oven.
  10. Alternate the baking trays halfway through the baking time. The cookies are ready when they start to turn golden brown at the edges.
  11. Allow to cool for 5 minutes on the baking tray and for 1 hour on a rack.
  12. Brush the dense biscuits with a layer of raspberry jam. Push a biscuit with an outstretched shape on top.
  13. Sprinkle the sandwich biscuits with a thin layer of icing sugar.
