Lettuce soup with onion and crème fraîche.

Remove the leaves from the lettuce and wash them. Chop the onion. Heat the butter in a soup pot and fry the onion for 4 minutes.

Add the lettuce and let it shrink slightly. Add the flour and leave to stir in 2 min. Add the vegetable stock and bring to the boil.

Remove the pan from the heat and puree with a hand blender. Stir in the crème fraîche and season with salt and pepper.
