Lightly spiced green curry with minced meat
Homemade green curry with white rice, cauliflower rice, sweet potato, coconut milk, sugarsnaps and lime.

Boil the rice according to the instructions on the package. Add the cauliflower rice the last minute.

Drain and leave with the lid on the pan until use.

Meanwhile, peel the sweet potato and cut into 1 cm cubes.

Heat the oil in the wok and fry the minced meat over medium heat in 3 minutes. Add the Thai Green Curry and sweet potato and cook for 2 minutes.

Add the coconut milk and simmer for 10 minutes with the lid on the wok on medium heat. Add the sugarsnaps for the last 5 minutes.

Halve and press 1 half of the lime. Cut the other half into segments.

Season the curry with the lime juice and salt. Divide the curry over deep plates and serve with the rice and lime wedges.
