Lime cheesecake with green fruit

Extra needs: food processor, spring form (18-20 cm) and a hand mixer with garden.

Lightly inflate the spring form and coat the bottom with parchment paper.

Clean the limes.

Soak the gelatine in a bowl of cold water for 10 minutes.

Crumble the spits in the food processor.

Mix in so much jam that it becomes a sticky dough.

Press the dough into the bottom of the mold until it is evenly covered with a cake layer.

Remove the core from half of the apples and cut the apple into thin slices.

Cover the cake base with the slices of apple.

Grate the green skin of half of the limes and squeeze out this lime.

Heat the juice in a saucepan.
-
Squeeze the gelatine well and dissolve the leaves in the warm juice while stirring.

Allow to cool slightly.

In a bowl, beat the whipped cream with sugar.

Put the vanilla cheese in a different bowl and mix in the gelatin mixture and the lime zest.

Then spat through the cream.

Transfer the curd mixture into the cake pan and smooth the top.

Leave the cheesecake in the refrigerator firmly in 3-4 hours.

Peel the kiwis.
-
Cut the remaining apple and lime and the kiwis into thin slices.

Remove the cake from the refrigerator, remove the mold and put the cake on a plate.

Make a nice mountain of fruit on top.
