Lime pancakes with raspberries
Delicious homemade pancakes with kefir, honey and lime, served with whipped cream and raspberries.

Heat the honey and half of the butter in a pan. Meanwhile, strain the self-raising flour over a bowl.

Grate the green skin of the lime and cut the fruit into segments.

Beat the kefir with the melted honey butter, the lime zest, salt and egg in a large bowl with a whisk. Beat the flour through.

Heat the rest of the butter in a frying pan and fry at the same time in 5 minutes 4 tablespoons of batter to 4 golden brown and cooked pancakes. Turn halfway.

Keep warm and bake 4 more pancakes.

Divide the pancakes over 4 plates, scoop some whipped cream on each plate and spread the raspberries over it.
