Grate 1/2 teaspoon of the lime zest and cut the rest of the skin into strings.

Squeeze out the fruit.

Mix the lime juice with 2 tablespoons of honey and spoon in the slices of kiwi.

Divide the kiwi over 4 glasses and sprinkle with half of the pistachio nuts.

Mix the ricotta with the curd cheese and the rest of the honey.

Divide this over the kiwi and sprinkle with the rest of the pistachios and the lime syrups.
