Preheat the oven to 200ºC. Drizzle the strawberries with balsamic vinegar. Stir the vanilla sugar through the curd cheese.

In a fat-free bowl, whisk the egg whites with a pinch of salt and sprinkle the icing sugar during the beating.

Spat the proteins lightly through the curd cheese. Divide the strawberries over the baking dishes. Spoon the curd mixture and place the dishes in the middle of the oven for 8-10 minutes. Serve the gratin to taste hot or cold.
