Luxury hot dogs with sauerkraut
Hotdog with veal sauces, sauerkraut, arugula mustard seed, oil, crème fraiche and fried onions.

Heat a frying pan without oil or butter and roast the sausages in 12 min. On low heat around brown and cooked.

Meanwhile, rinse the sauerkraut in a colander under cold running water. Squeeze out as much moisture as possible and place in a large bowl.

Mix with the rocket, mustard seed, oil, pepper and salt.

Remove the sausages from the pan, keep warm under aluminum foil and let the shortening sit.

Mix the crème fraîche, concentrated broth and mustard seed through the shortening. Warm for 1 min.

Season the mustard sauce with pepper. Cut the buns at the top.

Spoon some of the sauerkraut salad in each bun and put a sausage on it.

Divide the mustard sauce over it and sprinkle with the onions. Serve the rest of the sauerkraut salad.
