Spinach salad with apple and camembert


A tasty French recipe. The vegetarian main course contains the following ingredients: apples (firm, eg braeburn), apple juice, walnut oil, fresh spinach, camembert, (cider) vinegar, sharp mustard and garlic (squeezed out).

Directions

  1. Peel the apples, remove the cores and cut each apple into 12 parts.
  2. Bring the segments with the apple juice to the boil, turn the heat down and keep the juice for 5 minutes against the boil.
  3. Then scrape the segments with a slotted spoon on a plate.
  4. Boil the juice over a high heat in 10 minutes until there are still 2-3 tablespoons left.
  5. Allow to cool slightly.
  6. In a large bowl, whisk the boiled juice with the vinegar, walnut oil, mustard and garlic into a dressing.
  7. Add salt and pepper to taste.
  8. Spoon the spinach and apple slices lightly through the dressing.
  9. Cut the camembert into thin dots.
  10. Divide the salad over four deep plates and place the dots of camembert in between.
  11. Tasty with crispy sandwiches..
