Maccheroni with stewed vegetables
A tasty Italian recipe. The vegetarian main course contains the following ingredients: olive oil, red onion (in thin segments), garlic (in slices), eggplant (diced), red pepper (in coarse pieces), tomato cubes ((400 g), drained), red pepper wine vinegar, capers, maccheroni (2-colored pasta, 250 g, refrigerator compartment) and Dutch hard goat cheese (service department).

Heat oil in frying pan and fry onion with garlic for 3 minutes.

Add eggplant and paprika and stir-fry for another 5 minutes.

Pour the tomato cubes into the pan and gently let the stewed vegetables pan over the pan for 15 minutes.

Season with vinegar, capers, salt, pepper and possibly sugar.

Cook the maccheroni according to the instructions for use.

Distribute Maccheroni over two flat plates and create vegetables.
