Drizzle the onion with half of the lemon juice and set aside.

Cook the potatoes al dente in about 15 minutes and pour them off. Halve them.

Mix the ingredients for the dressing with the rest of the lemon juice, salt and pepper. Scoop the potatoes with the apple, mackerel and dressing together.

Roast the bacon in a dry, hot skillet until crispy.

Spread the spinach over plates and spoon the mackerel salad. Place the, possibly coarsely crumbled, bacon and onion rings on top. Garnish with egg wedges.
