Mackerel rillettes
Bite for the holidays: rillette of mackerel, chives, capers and lemon.

Prepare the mackerel fillet with a fork in a bowl.

Heat the butter in a saucepan until the butter is golden brown (beurre noisette).

Pour the butter if this color is reached immediately with the mackerel and mix with a fork.

Cut the chives finely and mix with the capers through the mackerel fries.

Grate the yellow skin of the freshly scented lemon and squeeze out the fruit.

Add the lemon zest and juice to taste, start with 1 tsp (for 8 people). Season to taste with pepper.

Let stiffen in the refrigerator for 30 minutes.
