Directions

  1. Halve the tomatoes, remove the seeds and cut the flesh into small cubes.
  2. Stir the balsamic vinegar through the oil and season with (freshly ground) salt and pepper.
  3. Spoon the tomatoes and spring onions with the balsamic dressing.
  4. Divide the mackerel fillet over 4 plates and add the tomato salsa..
