Manchego-marinated beet skewer
A tasty Spanish recipe. The vegetarian appetizer contains the following ingredients: walnut oil, sherry, vinegar, garlic, fresh dill, boiled beets and manchego (Spanish sheep cheese).

In bowl of oil, sherry and vinegar, beat until dressing. Squeeze out garlic. Remove 3 branches from dill. Cut the rest of dill over the dressing fine. Peel the beetroot and cut into pieces of approx. 1 1/2 cm thick. Marinate for 1 hour in dressing, occasionally shovel. Cut manchego into triangular slices of approx. 1/2 cm thick.

Stick 2 slices of manchego and 2 pieces of beet on each stick. Insert pieces of the trailed dill branches between them.
