Mara grimm shakshuka (tomato stew with egg and fennel)

Directions

  1. Chop the onion and finely chop the garlic.
  2. Cut the bottom of the fennel and a piece of the top and halve. Remove the core. Cut into strips.
  3. Heat the oil in a frying pan and fry the onion and garlic for 3 minutes. Add the fennel and cook for 7 minutes on low heat.
  4. Meanwhile, cut the red pepper into rings.
  5. Add together with the tomato cubes, fennel seed, pepper and possibly salt to the vegetables and simmer for another 15 minutes.
  6. Make a well in the vegetable mixture per person and break an egg above each well. Cover the pan with a lid or aluminum foil and bake for about 4 minutes until the eggs have solidified.
  7. In the meantime, cut the coriander roughly. Sprinkle with the chiliflakes over the shakshuka. Serve in the pan with the bread.
