Peel the bread roll garlic. Bring the vinegar and the same amount of water to a boil in a saucepan. Add 1 tsp salt and add the garlic cloves.

Cook for 3 minutes. Take the garlic cloves out of the liquid and allow them to cool.

Let the olives drain. Cut the cheese into cubes of about 1 cm.

Prick the red peppers with a knife tip and put them together with the cheese, the olives, the thyme and the garlic cloves in the well-cleaned jar.

Pour in so much olive oil until everything is covered. Allow to marinate for at least 3 days in a cool, dark place.
