Marinated salmon with vodka and lemon
A delicious scandinavian recipe. The starter contains the following ingredients: fish, lemon (scrubbed), fresh dill (finely chopped), vodka (slijter), coarsely ground sea salt, granulated sugar, salmon fillets and radishes.

Grate the yellow skin of the lemon above a bowl. Stir in the dill and the vodka.

Mix the salt and sugar together. Dab the piece of salmon fillet dry and rub the fish in with the salt-sugar mixture. Then divide the lemon-dill mixture over the fish.

Put the fish in a bowl, put a piece of cling film on it. Put a small board or plate on it and put something heavy on it, for example a filled liter tin. Marinate the salmon in the fridge for 24 hours. Turn the piece from time to time.

Remove the piece of salmon from the dish and carefully pat dry with a piece of kitchen paper. Cut the salmon into slices as thin as possible and place them on a dish or divide them over 4 plates. Grind pepper over the salmon according to taste.

Cut the radishes into very thin slices and sprinkle over the salmon. Tasty with warm toasted bread or blinis.
