Spicy tuna salad with red pepper, coconut, onion and lime on a roasted pita bread.

Drain the tuna and put in a large bowl.

Chop the onion as finely as possible. Halve the pepper in the length, remove the seeds and cut the flesh finely. Add to the tuna.

Grate the peel of the lime over the bowl with the tuna and squeeze the fruit. Add the juice to the tuna.

Add the coconut and mix the ingredients together with a fork until you have a tuna salad with a fine texture.

Remove the leaves from the head of lettuce and wash and dry them. Roast the pita bread in the toaster.

Cut them open as an envelope and fill them with the lettuce and the tuna salad.
