Melt the butter and mix in cinnamon, thyme and freshly ground pepper.

Put in the apple pieces and pour in the wine. Stew the apples for about 10 minutes until they are soft.

Stir once into a coarse compote. Add a pinch of salt to taste.

Serve the compote lukewarm. Delicious with chicken, meat and game.
