Preheat the oven to 200ºC. Cook the pasta according to the instructions on the package, but take 2 minutes of the cooking time so that the pasta is just undercooked.

Heat the butter in a (stalk) pan and add the flour. Keep stirring until a roux occurs. Then slowly add the milk and stir with a whisk into a creamy sauce.

Add 100 grams of old cheese, 100 grams of young cheese, half of the mozzarella and half of the blue cheese and stir until the cheeses are melted. Season with salt, pepper and nutmeg.

Mix the cheese sauce through the pasta and scoop in the baking dish. Divide the rest of all the cheese over the pasta. Bake in the oven in about 20 minutes until golden brown.
