Split the egg, the protein is not used.

Mix the egg yolk in a bowl with the mustard, salt and vinegar.

Pour the sunflower oil and the olive oil with a whisk, while stirring with a whisk.

Beat until all the oil has been absorbed and you have a thick, creamy mayonnaise. Season with pepper and salt and extra vinegar or lemon juice.
