Preheat the oven to 225 ° C.

Clean the potatoes and boil them in water for 15 minutes in water with salt. Allow to cool.

In the meantime, finely chop the leaves of the thyme, the rosemary needles and the oregano leaves. Clean the lemon and grate the yellow skin.

Cut the potatoes into wedges. Mix in a bowl with the oil, spices, pepper, lemon zest and salt.
