Directions

  1. Chop the onion and press the garlic. Heat the oil in a soup pot. Fry the onion, garlic and the soup vegetables. Add the spinach in portions (keep a handful of spinach) and let it sink on a low heat with lid on the pan.
  2. Add coconut milk, water and chili powder too. Bring to the boil and let it cook for a while. Cut the reserved spinach into strips.
  3. Purée the soup with a hand blender or food processor. Season with pepper and salt. Divide the soup over the bowls. Sprinkle the sliced ​​spinach over the ciabatta. Serve together with the soup.
