Meal soup of fresh spinach and coconut
Vegetarian meal soup with fresh spinach and coconut. Nice to serve with ciabatta bread.

Chop the onion and press the garlic. Heat the oil in a soup pot. Fry the onion, garlic and the soup vegetables. Add the spinach in portions (keep a handful of spinach) and let it sink on a low heat with lid on the pan.

Add coconut milk, water and chili powder too. Bring to the boil and let it cook for a while. Cut the reserved spinach into strips.

Purée the soup with a hand blender or food processor. Season with pepper and salt. Divide the soup over the bowls. Sprinkle the sliced spinach over the ciabatta. Serve together with the soup.
